No Longer Under "Room Arrest"

Well, if you remember my "imprisonment" yesterday, you may be wondering if I ever got out of my room...

Well, I did, and here is what my dear Darlings were doing whilst their momma slumbered...



Our 10 year old, Cherished of God, came up with this concoction all on her own (well, she had a little idea from watching me make a fudge with some of the same ingredients before...).  I am quite amazed that she was able to come up with something like this, and it tastes quite good!  Of course she had her (younger) sisters' help with putting in ingredients and taste-testing.  Our eight year old informed me that Cherished was so excited about what she was making, that she was bouncing around the kitchen at the end with the almonds--and dropping them, and had to keep asking her sisters to get her more to add to the cookies.  Would you like the recipe?  Well here it is...

She calls it Chocolate Fudge Cookies with Almonds:

Ingredients:
  • 1 cup virgin coconut oil, melted or softened
  • 1/2 cup cocoa
  • 1/2 cup almond butter
  • 4 T butter, softened
  • 1 T sucanat ,or Rapadura (This is a pure, unprocessed granulated sugar.  White sugar can be substituted, but we don't use it at our house.)
  • 1 T cinnamon
  • 2 T vanilla extract
  • 1/4 cup raw honey
Directions:
  •  Mix all ingredients together until smooth.  Form 2 inch cookies with a spoon and drop on wax paper.  Put 2 almonds on the top of each cookie.  Place in refrigerator to harden.
Makes about 21 cookies.

Note:  They didn't quite harden completely, but are still a little sticky.  But they're scrumptious!

  1. sounds excellent! we will have to try it. tell me more about how u like using succanet- i have been on only honey but would like to try something else. i am growing a stevia plant to use instead.

    1. I like it a lot--just use it in place of white sugar (equal measurements).

  2. How absolutely precious... My daughters ages 11 and almost 10 do this same kind of thing..They love experimenting and coming up with wonderful creations... I LOVE it!! Wonderful memories being made in the kitchen.. ;)

  6. When I returned from a week away visiting my mother, my son had made me a delicious custard tart, he even made the pastry case himself. It as so good, I put in another order.
