It's Best to Eat What God Made

 

"The Diet Dictocrats are strangely silent about the ever increasing trend toward food processing & the devitalization of America's rich agricultural bounty. Food processing is the largest manufacturing industry in the country & hence the most powerful. This industry naturally uses its financial clout to influence the slant of university research & the dictates that come from government agencies. A 1980 study showed that almost half the leading officials at the FDA had previously worked for organizations the agency is mandated to regulate. The universities have equally powerful ties to the food processing industry. A good example is Harvard where Dr. Frederick Stare, head of the nutrition department for many years, began his career with several articles delineating nutritional deficiencies caused by white flour & a study on Irish brothers that positively correlated a high intake of vegetable oils--not animal fats--with heart disease. Soon after he became department head, however, the university received several important grants from the food processing industry. Dr. Stare's articles & weekly newspaper columns then began assuring the public that there was nothing wrong with white bread, sugar & highly processed foods. He recommended one cup of corn oil per day to prevent heart disease, & in one article he even suggested Coca-Cola as a snack!"

Spring Sightings

It has been very warm here, especially since we have not been able to run our cooler during the past week.  Last week, our roof started leaking from our cooler, so we had to stop using it.  It has gotten up to 87 degrees in the house most days.  But hopefully that is fixed now.  These things in life are when we must learn contentment in all circumstances.  I am very thankful that the cooler is fixed now, but we still have ceiling damage to get taken care of.



 Not too long ago, I also suffered a miscarriage.  Just a week after we found out we were expecting, and our little one was gone to be with the Lord.  It has been a very hard thing, as everyone was so excited to have a new baby in the house.  There were so many discussions with the children in that week, as they excitedly talked about what the baby might look like, if it would be a boy or a girl, remembering how babies smell and the sweet noises they make.  But the Lord is good, and it was His will that our baby should be in Heaven with Him now.  I am reminded of the many women who have not been able to have any children here on this earth, and how it must break their hearts.  I am very thankful to the Lord that He has seen fit to bless us with several children on this earth.

But we continue to learn and grow, clinging to Christ in the midst of life's toils and trials, and really, we have so much to be thankful for.  We know in this life we will have tribulation, but the Lord says to be of good cheer, as He has overcome the world.

We have had other things to enjoy this Spring, like beautiful sunsets:


One of our daughters requested this cake for her birthday.  It was made a few weeks late, as we had so much going on during her birthday week.  It is called "Chocolate Berry Wedding Cheesecake".  It was good, but I think I did not put enough coconut sugar in it.  I will have to make adjustments for next time.


And then, we have had these lovely bright yellow birds at our hummingbird feeder recently.  I believe they are orioles.  They are very timid--you have to sneak up on them without making a sound, and without making a noise either.  They make quite a lot of noise themselves, but they are really beautiful.  I managed to take some pictures of a male.





I have been so busy this week that I have had the older girls cook all the meals.  But at least they are getting more practice, and I am sure glad I trained them when they were younger and taught them how to cook!  Now I just must not forget to teach the younger ones too.  The children are having homemade thin mint milkshakes for breakfast.  They really enjoy them.

Bread Baking


I am thankful to be back to bread baking.  We had taken quite a break, as my children were off of grains for awhile.  But they are back now to including soaked, sprouted, and fermented grains in their diet.   A few months ago we made a sourdough starter and added to it each day until we had enough dough to make five loaves of sourdough bread.  It turned out lovely and delicious.  After a couple of more batches, something went wrong, and we had to throw out the starter.  I have not had the time to make a new starter.

So a couple of days ago Cherished of God asked if she could make bread.  I said yes, and she placed everything in our bread machine for soaking.  Overnight we soaked spelt flour in kefir and butter.  We add these ingredients in and set the machine to "dough", and it mixes it up into a nice ball of dough.  After that cycle is done, I add in the mixture of honey, water, yeast, baking soda, and salt, and a little more flour.  I set the timer to start sometime in the morning, so that the nice, fresh loaf will be ready and cooled by lunchtime.  It really is a convenient way to have fresh, homemade bread for the next day when you don't have time to sit and knead bread dough by hand.  I am thankful for our bread machine.

For lunch, the children will have sandwiches with peanut butter (with nothing but organic peanuts) and raw honey, plus some vegetables.  They have really been enjoying their sandwiches.  There is nothing like warm, fresh baked bread!

Several years ago we changed our diet to become healthier after I read a very thought-provoking book that is also a cookbook.  For as long as I can remember, we followed the "Standard American Diet" or S.A.D.  But when we had health problems the doctors could not diagnose, it turned my interests to finding out what was wrong and how I could help my family.  This research changed what fats and sweeteners we used, among other things.

    Things I'm Reading and Thoughts About Grain-Soaking

    Do you ever log onto the computer to check your email and get totally distracted and get sucked into reading article after article?  Yeah, me too. *guilty face*

    But I did want to share a few things with you I've been looking at, simply because they are so interesting and really made me think.  Well, the first isn't so shocking, just a recipe for homemade cream of mushroom soup.  I've actually made my own version before because the store-bought kind is so bad because it contains the neuro-toxin MSG.



    So there's a recipe that looks good, but I haven't tried it yet.

    OK, now onto what got me distracted for way too long.  Soaking grains.  I am big on grain-soaking, at least in theory.  I have to admit I don't always have time to soak our grains, but I usually feel guilty when I don't and wonder if I'm forever harming my children's health in the process.  Sooo...imagine my interest when I stumbled upon some articles discussing whether soaking grains is actually necessary or not.  I even found some information that states that phytic acid is actually beneficial to your body...Now what to believe?  I am still not sure.  I haven't come to a conclusion yet.  I need to do more research when I have time *ahem*.  But I do know one thing.  I am glad I know the Lord who holds all of my days in His hand.  Isn't that a relief?

    A few other thoughts I have:
    • Antibiotics have surely contributed largely to our population's health problems because they kill off the good bacteria in our guts
    • It is important to keep fermented foods in our diets to keep our good bacteria highly populated in our guts
    • By the way, it bothers me about all the "anti-grain" craziness going on when Jesus is called The Bread of Life and there are so many positive references to bread in God's Word.  And yes, I have even been on GAPS before, but I just think we need to not say that grains are the ultimate evil in food.  Not at all.
    • I know I would really, really like a Nutrimill Grain Mill!  Hopefully one day I'll be able to get one.  Guess I need to save up those Amazon gift certificates.  Or something!
    • Food is not our god but can be used as one of the best form of medicine by eating as healthy of a diet that we can within the constraints of time and finances that God has given us.  Prayer for wisdom from God is met with a promise from God that He will give us that wisdom.

    Well that's enough for now.  Here are some of the articles I was reading if you are interested in seeing the other side of (not) soaking grains.
    Conclusion: I'm not saying you shouldn't soak your grains, but I guess there is another side to the story.  If you have limited time, I just suggest reading the Phytic Acid-Friend or Foe? article.  Meanwhile I guess I will try to stop feeling immensely guilty every time I don't soak our grains.  And please, do what works for your family!

    No Longer Under "Room Arrest"

    Well, if you remember my "imprisonment" yesterday, you may be wondering if I ever got out of my room...

    Well, I did, and here is what my dear Darlings were doing whilst their momma slumbered...



    Our 10 year old, Cherished of God, came up with this concoction all on her own (well, she had a little idea from watching me make a fudge with some of the same ingredients before...).  I am quite amazed that she was able to come up with something like this, and it tastes quite good!  Of course she had her (younger) sisters' help with putting in ingredients and taste-testing.  Our eight year old informed me that Cherished was so excited about what she was making, that she was bouncing around the kitchen at the end with the almonds--and dropping them, and had to keep asking her sisters to get her more to add to the cookies.  Would you like the recipe?  Well here it is...

    She calls it Chocolate Fudge Cookies with Almonds:

    Ingredients:
    • 1 cup virgin coconut oil, melted or softened
    • 1/2 cup cocoa
    • 1/2 cup almond butter
    • 4 T butter, softened
    • 1 T sucanat ,or Rapadura (This is a pure, unprocessed granulated sugar.  White sugar can be substituted, but we don't use it at our house.)
    • 1 T cinnamon
    • 2 T vanilla extract
    • 1/4 cup raw honey
    Directions:
    •  Mix all ingredients together until smooth.  Form 2 inch cookies with a spoon and drop on wax paper.  Put 2 almonds on the top of each cookie.  Place in refrigerator to harden.
    Makes about 21 cookies.

    Note:  They didn't quite harden completely, but are still a little sticky.  But they're scrumptious!

    Healthy Eating 101

    These guidelines for healthy eating will help you and your family to enjoy better health.  If there is any subject you would like me to share more on after you read this, please leave me a comment below about what you'd like to know!

    Some Things About Healthy Foods

    Organic
    Buy organic whenever possible, but if you cannot buy everything organic, the most important things to get are animal products, especially meat.  However it is very expensive, so if you can't get meat organic, at least get your meat from a health foods store.  I think their meat is at least better than Walmart's.  Sometimes health foods stores put their organic meats on sale, so watch for that.

    After animal products, there are certain fruits and veggies you should always try to buy organic.  Some are very high in pesticides.  Here is a list of the worst and the best for pesticides.  View a full list of fruits and vegetables here.

    Cheese
    The really only healthy cheese to eat is raw milk cheese.  It will say "raw milk cheese" on it and is available in health foods stores.  The same thing goes for milk.  Drinking pasteurized milk is really not good for you.

    Salt
    Did you know salt is good for you?  Yes, it is!  Just not the stuff you normally see on the store shelves (table salt).  At most health food stores, you can find salt called Celtic Sea Salt that comes in plastic bags.  The salt is light grey and moist and is loaded with minerals!  The best one to get is the coarse light grey, not the fine ground, but the find ground will do if that's what you can find.

    Fats
    It is really healthy to eat fats.  Your body needs them.  Good fats to eat are butter (organic is best), virgin coconut oil, olive oil (if you're not cooking with it), and the fats on meat.  Stay away from all vegetable oils, including canola and corn oil.  Margerine is like plastic and should not be eaten.

    Grains
    White breads should be avoided.  Grains should actually be soaked or sprouted before eating--it makes it so your body can properlydigest them.

    Sugars
    White sugar should be avoided.  Artificial sweeteners are like poisons to the body.  Some safe to use (in moderation) sweeteners are sucanat, pure maple syrup, stevia, and raw honey. Stevia should be the green powdered kind, and not white
